Nutritious and Delicious Warming Fish Stew
As the nights draw in and we're looking for comforting dishes, this warming fish stew hits the spot whilst delivering the protein and antioxidants that our immune system needs.
Ingredients (serves two):
3 garlic cloves chopped (or equivalent cheats chopped garlic)
2 shallots finely diced (or equivalent frozen chopped shallots from Waitrose)
1 tin chopped tomatoes
A few sprigs of fresh thyme (or tsp of dried thyme)
2 sweet potatoes, peeled and diced into 1cm chunks
1 pint fish stock
1 large carrot, washed and diced into 1cm chunks
2 pieces of cod (or another white flaky fish). Can use fresh or frozen.
1 tbsp white wine vinegar
1 level tsp chilli flakes (optional)
12 - 14 kalamata olives
Extra virgin olive oil
Method:
· Heat a glug of olive oil in a large, deep pan. Add the carrot, potato, garlic and shallot, cook for a few minutes until onion is translucent and vegetables begin to soften.
· Add the olives, thyme and chilli flakes. Fry for another minute.
· Pour in the fish stock and tinned tomatoes then simmer until the sweet potatoes and carrots are cooked, and the tomatoes have thickened, adding a little water if needed.
· Season to taste with salt and pepper, and add the white wine vinegar.
· Gently add the fish, cover pan with a lid, and cook for around 4 minutes until the fish is cooked through. Avoid stirring the mix too much during this time to stop the fish from breaking up.
· Serve with your choice of wilted greens drizzled with extra virgin olive oil.
